Hey Mike

Just wanted to let you know that I made some comments about caring for cast-iron etc. I posted it on Rouxbe.
It is under the Miso recipe blog.

I have more that I am working on about things I have in my pantry. What I cannot live without in the kitchen. But it is in the works.

Keep on writin'

Mike, I absolutely love your mother for her way of thinking.
“Look. There’s the pot. There’s the trash can. There’s the car keys, and there’s the [choose your favorite fast food chain] down the road. Now let’s see what we can do to fix this.”
It is so true!

If you haven't already, I buy my green coffee beans at Java Coffee and Tea out on west Westheimer. http://www.javacoffee.com The websites not much to look at, but the store smells great. They also roast their own in the store as well.

Hi Mike

Sounds like you are a bit of a foodie for sure! I was thinking of you the other day while I was whipping (ya! right!) up a batch of demi glace. I too have done some coffee roasting but I have now been banded from doing it in the house. But the idea of making coffee on my porch in the middle of winter is not that appealing really. Also just so you know I did comment on your post on our site. Thanks again for checking us out.

Kudos on doing your own roasting... I've been thinking about it for a while. My problem is I'll need to do a pretty good job of it to compete with the whole beans I buy from Intelligentisa (www.intelligentsiacoffee.com).

I'm guessing that if you're doing home roasting you know about CoffeeGeek (www.coffeegeek.com), but just in case, I'll mention it. Great resource on true culinary coffee (i.e. real quality coffee).

I'm looking forward to news of your roasting efforts. :)

Regards,
Jeremey.

I too roast my own coffee. I've got the Freshroast 8, which is essentially a suped up version of what you're using. I used to order from Sweet Marias and paid a lot of attention to their rating systems, but recently I discovered Dean's Beans. It's cheaper than SM's and all of their stuff is organic and fair trade. I have no idea what SM's would rate this stuff, but I've never been able to tell that theirs is any better than Dean's. Another roasting method that I've tried is the "dog bowl/heat gun" method. Basically, you get a large metal bowl, heat gun, wooden spoon, and up to 1 lb of beans. It takes about 15-20 minutes, and the roast isn't quite as even, but you can do more at one time. Cheers.
