I love Mac & Cheese. Anything involving cheese is a good thing to me. However, this wasn't one of your best batches. It probably didn't help that I ate it well after it was ready. It was a wee bit dry though.

I strongly encourage you to practice more on the Mac & Cheese. Maybe even making it daily? ;-)

So I'll admit I left one step out - I had a bit of the cheese left after I built the sauce, so when I baked the macaroni, I topped it with the leftover cheese and let that melt and lightly brown. I've done it with bread crumbs before as well, with much success; the family's preference is for more uniform texture (as opposed to contrast), so a cheese topping wins.

Oh how I love mac & cheese. I have a great recipe that also uses seasoned bread crumbs. You put down one layer of noodle/cheese mixture, top w/ a layer of bread crumbs, top w/ a layer of shredded cheese, then put on another layer of noodle/cheese mixture, top w/ layer of bread crumbs, top w/ layer of shredded cheese, then bake it. SO. friggin'. GOOD!!

Great. Now I'm hungry again.

Dang, that sounds good right now. Definitely should not have read this at 11am, though. It's all I'll think about for the next hour+.

Though I must say that I always prefer my mac 'n' cheese with some sort of crust, be it bread crumb or just a slight layer of baked cheese. Adds textural variation.

Mmmm...mac and cheese...

So where do you fall on the issue of baking it with bread crumbs on the top? Sometimes I feel very purist and want no bread crumbs. But sometimes...Mmm, crunchy.
